Puerto Rico: Dinner at Vista's in downtown Ponce!
Back in February, we visited Eric’s Aunt Norma for a couple days prior to my birthday cruise on Norwegian Viva that left out of San Juan port. On our last night in Ponce, Eric said that we would come back for his birthday. Fortunately, we were able to come back, relax, and enjoy some quality time with his family. First stop on our culinary tour is an amazing restaurant called Vista’s. With spectacular views of Ponce, this rooftop restaurant is a sight to see!
Due to the humidity, we opted to have dinner and drinks indoors, but for those of you that don’t mind the heat, outside is lovely. We started off with cocktails. Aunt Norma enjoys Johnny Walker black label on ice, Eric had a rum based cocktail, and I had multiple glasses of lavender scented martinis. Onward to our dinner, which started with a lovely ceviche, paired with long plantain chips, a sampler with barbeque chicken, and pork, a spectacularly fried coconut shrimp, and perfectly done scallops with mashed potatoes. We then split a mixed green salad three ways, and Eric and Norma split a chicken entree with potatoes and vegetables. I ordered a pork tenderloin with a mixed green salad, and pigeon peas with rice. Absolutely delicious, juicy, and tender! Thank you to all the staff at Vista’s for a lovely dinner, and start to my husband’s post birthday celebration!
